Texture Analysis in action: the Pizza Tensile Rig



Pizza toughness test using the TA.XTplus Texture AnalyserThe PIZZA TENSILE RIG (A/PT) is comprised of two four-pronged components. 

The upper component fits directly to the loadcell and the lower to the base of the texture analyser. The rectangular shaped test sample is positioned on the attachments using the prongs. 

The tensile force and extension to break the sample is measured and used as an indication of pizza toughness.

In a departure from its original design use, a new tensile test using the Pizza Tensile Rig provides high levels of accuracy when predicting post-mortem gaping in fish (the appearance of tears or slits within the fillet on handling), providing a valuable addition to the existing pool of instrumental methods for fish flesh quality assessment. This test features in an independent study by the Fish Muscle Research Group, University of St Andrews, and published in the Journal of Food Science.
